Bean & Cheese Quesadilla

A crispy, cheesy quesadilla filled with seasoned black beans, fresh vegetables, and melted cheddar. Quick, easy, and satisfying for lunch.

🥕 Ingredients

  • 1 medium Tomato
  • 1 medium Onion
  • 1 medium Bell Pepper
  • 2 tbsp Cilantro
  • 1 tsp Salt
  • 2 pieces Tortilla
  • 1 cup Sour Cream
  • 1 cup Cheddar
  • 1 tbsp Vegetable Oil
  • 1 can Canned Beans

👨‍🍳 Instructions

    Drain and rinse the canned black beans

    Dice the onion and bell pepper into small pieces

  3. 3

    Heat a tablespoon of vegetable oil in a pan over medium heat

    Sauté the onion and bell pepper for 3-4 minutes until softened

    Add the black beans with a pinch of salt and cumin, cook for 2 minutes

    Place a tortilla in a clean pan over medium heat

    Sprinkle half the tortilla with shredded cheddar cheese

  8. 8

    Add the bean and veggie mixture on top of the cheese

    Fold the tortilla in half and press down gently

    Cook for 2-3 minutes per side until golden brown and crispy

    Cut into wedges and serve with sour cream, fresh cilantro, and diced tomato
